Cocoa, Cookies & Cream Popsicles (V, GF options)
Our popsicle take on the classic ice cream flavor. Who doesn't love cookies and cream? There's nothing like a cold lick of cream with bits of crunchy cocoa cookie. This recipe calls for cream-stuffed sandwich cookies like Oreos, but you can easily substitute them for another brand like Good Girl or Back to Nature.
INGREDIENTS:
Cocoa Magic Layer:
1 cup plant yogurt
1 cup full fat coconut milk, room temperature
1/2 cup Cocoa Magic
1/4 cup maple syrup
Cream Layer:
1 cup plant yogurt
1 cup full fat coconut milk, room temperature
1 teaspoon vanilla
1/4 cup maple syrup
15-20 Cream Stuffed Sandwhich Cookies, crushed (Oreos, Back To Nature Classic Creme Sandwich Cookies, or Good Girl
Optional Magic Shell Drizzle:
1/2 cup Classic Dark Baking Chocolate
1/3 cup coconut oil
STEPS:
- Whisk together Cocoa Magic layer ingredients until smooth.
- Separately, whisk together cream layer ingredients.
- Pour 1-2 tablespoons of Cocoa Magic layer into ice cream molds, sprinkle a few oreo bits in and let set in freezer for 30 minutes.
- Remove from freezer and add 1-2 tablespoons cream later, sprinkling more oreo bits, and place back in freezer for 30 more minutes.
- Remove from freezer and add another Cocoa Magic layer and a few last oreo bits.
- Freeze for about an hour to firm up and then add popsicle sticks to popsicle centers, pushing about 2/3 of the way down.
- Freeze popsicles overnight.
- To make magic shell, melt together chocolate and coconut oil, and let set out at room temperature.
- To remove from molds, run under warm water for about ~30 seconds until popsicles slide out of molds.
- Place on a parchment lined tray, drizzle magic shell over popsicles, and pop back in freezer to set before consolidating to store.
